The closest thing to a real “zombie” scenario in my opinion is depicted in a video game called “The Last of Us”. The infection is fungal and spreads either through a bite or spores in the air. As mushrooms do, the fungus is self-sustainable by using the natural resources around it, therefore the zombies did not decompose.

This is of course on case to case basis as, like regular humans, each zombie handles the virus/meteorite magic / supernatural differently which is why you’ll have some incredibly fresh looking zombies (recently turned survivors be damned) despite years of the conflict.
