Depending on where your leather comes from, how it’s tanned, and what the company stands for. It can be a great ethical choice. Vegetable-tanned leather is more expensive but doesn’t add any harmful pollutants into the environment or contaminate drinking water. The average is an increase in profits of 68%, with that being higher in developing countries like India. If lower profits are killing Indian farmers, then organic cotton would be a prime culprit.
The only argument that can be made is that per plant, sometimes organic cotton uses less water, but its yields are lower so more plants (thus more land, more water) are needed to make any given item of clothing. Besides that, in places like the US most cotton is watered by rain making it an irrelevant point anyway.
