the restaurants I stop coming to are because their food is bad, overpriced, or it takes forever. restaurants actually have a pretty low bar for “good enough”. the tricky part is never providing a bad experience because that’s when people leave and never come back. a decent restaurant that never fucks up will be far more profitable and enduring than a good restaurant that fucks up every now and then.
