All that said, when you get down to it, it is a bitter, caustic, weird fluid. And yet I just got a different kind of beans, and I find myself thinking “oo this is really good, I like these much better than the old kind.” So there must be some difficult-to-define way in which I like the taste. Or the new ones are just LESS BAD than the old ones, without actually being good. Who knows, it’s a strange ritual.
Have you ever tried a good coffee, black, with just a spoon or two of sugar? Cream changes the taste of a LOT, whereas just a bit of sugar will mask the bitterness. I couldn’t stand black coffee until someone put me onto just leaving out the milk, and that really did it for me.
