All that said, when you get down to it, it is a bitter, caustic, weird fluid. And yet I just got a different kind of beans, and I find myself thinking “oo this is really good, I like these much better than the old kind.” So there must be some difficult-to-define way in which I like the taste. Or the new ones are just LESS BAD than the old ones, without actually being good. Who knows, it’s a strange ritual.

I’m with you most of the way on this. I started drinking it because I loved the smell; anything that smells that good must be amazing, right? Continued drinking it for a long time because I figured 1.) it was an acquired taste (which it is), and 2.) I probably wasn’t any good at making it (which I’m not). And in addition to the smell is amazing, there’s a ritualistic aspect to making it that is also a lot of fun.
