Generally, coffee from the chains (Starbucks, Peet’s, etc) are over-roasted and brewed too hot, making them very bitter. I think this is why some people assume all coffee is that way. Maybe try a cold-brew (noticed) coffee. Cold brew is a different method that generally doesn’t release the chemicals that make it bitter. It’s not for everybody, but it sounds like maybe you haven’t had a proper coffee.
I’m with you most of the way on this. I started drinking it because I loved the smell; anything that smells that good must be amazing, right? Continued drinking it for a long time because I figured 1.) it was an acquired taste (which it is), and 2.) I probably wasn’t any good at making it (which I’m not). And in addition to the smell is amazing, there’s a ritualistic aspect to making it that is also a lot of fun.
