As a Brit, I envy Americans. Whenever I see a cake in American TV shows/movies, it looks delicious and moist, presumably made with buttercream. In the UK such cakes are almost always made with fondant and we don’t really ‘do’ buttercream. It’s odd. This explains why How To Cake That just SOAKS each cake layer in simple syrup. My amateur baker self just watches that in utter confusion.

Am I the only person in this thread who’s had some really tasty cakes even though they were decorated with fondant? Like yeah, the fondant is awful if you actually eat it, but that doesn’t preclude the cake underneath from being delicious My wife and I have made a few wedding cakes as gifts to friends. In fact, my wife made her own wedding cake. We make the fondant more flavorful, and the cake is always light and delicious.
